Why is the Scale Factor different from what I expected?
The scale factor is based on the volume (area × height) of the pans. If you leave the height fields blank, the tool assumes the height is the same for both pans and calculates based only on the surface area. Even a small change in diameter (e.g., from 20cm to 24cm) significantly increases the area due to the squared radius.
Should I provide the height of the pan?
Only if the pans have significantly different depths or if you want to reach a specific depth in your new pan. If you want the same thickness of the cake as in the original recipe, you can leave the height fields empty (or set them to the same value).
Are there any ingredients I shouldn’t scale?
While the tool scales everything mathematically, use common sense for:
- Eggs: If the result is 2.2 eggs, you might need to use 2 large eggs or whisk 3 and use a portion by weight.
- Spices and Leavening: For very large scale-ups, you might need slightly less baking powder or salt than the math suggests.
